
Woke up this morning, I rushed excitedly downstair to the kitchen. Pinto bean that was cooked last night needed to get salted and peppered. I prefer using organic dried bean than canned one although it needs to be cooked for more that an hour unless I have a press cooker. Frying four eggs and chopping lettuce and tomato lined up to my to do list that morning. I was preparing lunch and dinner for our picnic today.
In less than an hour, our four burritos were ready. I could smell hint of Mexican restaurant in my kitchen. Hihi...
After taking shower, two packs of burritos (2 burritos a pack), a bag of samosas, a bag of banana bread, a thermos for coffee, a bottle of water, and napkins were all in one bag. We were ready. We would get to the mountain, which also a border between Tennessee and North Carolina around lunch time. Perfect time and place to get lunch then relax on a day before last day of the year. After that we would walk at downtown Gatlinburg just to have fun and window shop then park somewhere to have dinner. We had to leave soon, because winter days is short days. We didn't want to be in dark while at the top of the mountain.
Before I got inside the car, hubby realized that Mighty, our car had a flat tire. He run to the tire shop to get it fixed, but the shop was busy. He got back back home, had lunch then went back to the shop one half an hour later. It was too late to drive to the mountain. We ended up eating our burritos while watching movie at home. Thanks God he knew that the car had flat tire while we were still at home, not at the mountain. Thanks be to God...
